Suppliers

We are very proud and thankful for our collaborators and suppliers. They supply us with high quality fresh produce, which is made in ways that reflect with our own set of values. We value small-scale farmers with a passion for what they do. We believe that special care and attention translates into the quality of the product – and when prepared with a similar level of heed- into the overall taste of the dish.

MOLINI DEL PONTE

Making great pizza starts with wholesome grains turned into nutricious flower, and because of this we are very proud to collaborate with Molini del Ponte. Located in Sicily, Molini del Ponte produces exquisite, ancient types of flower in their beautiful stone mill.

FUNGA FARM

A local farmer of ours is Funga Farm. Placed in Nordvest, Copenhagen, Funga Farm has an original and admirable approach to growing organic mushrooms.

DEL GRILLO

Besides expertise, we also chose to honour our heritage. Del Grillo from Sicily supply us with delicious tomato passata, wine and olive oil – and they are organic.

KYSØKO

Kysøko is found in Central Zealand, where they produce succulent, organic fruit, and are committed to sustainable farming.

STENSBØLGÅRD

Stensbølgård is located in an idyllic setting between Roskilde Fjord and Isefjord. They supply us with their lush seasonal vegetables. They are also proud cattle, chicken and bee keepers.

GRIS LAM & CO

Gris Lam & Co is a small family driven butchery and kitchen which sources its meat from nearby farms to reduce emissions and waste. Their meat selection emphasises animal welfare, and this is reflected into the quality of their organic products.

NABOFARM

One of our neighbourhood suppliers are Nabofarm. Located in Copenhagen, Nabofarm uses vertical farming methods, and produces micro greens. They see urban farming as a solution for climate change mitigation and adaptation.

HKI OST

HKI Ost is a small-scale business with an enormous passion for cheese. They supply some of the finest restaurants with carefully selected European cheeses. Their curiosity helps us expand our own culinary horizon.

HINDSHOLM GRISEN

Hindsholm Grisen produces hearty and tasty organic pork. Their pigs live an outdoor life in the picturesque Northern Funen.

BIRKEMOSEGAARD

Birkemosegaard is a biodynamic/organic family owned farm. They are located in Sjællands Odde, and have won several prizes for the taste and quality of their vegetables.

COPENHAGEN GOAT MILK

An exciting partnership of ours is with Copenhagen Goat Milk. They are passionate about goat milk, and have ambitious plans of transforming it into an increasing variety of dairy products.
